Choice Chili

This chilli is by far the best I’ve ever eaten. Although there are several “non-traditional” ingredients, they’re well worth adding in. Enjoy!
Ingredients
  • 2 tablespoons olive oil
  • 1 tablespoon sesame oil
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped coarsely
  • 1 red pepper, seeded & coarsely chopped
  • 1 yellow pepper, seeded & coarsely chopped
  • 1/2 kilo (1 pound) raw minced beef
  • 1 heaping teaspoon chili/cayenne powder
  • 1 heaping teaspoon cumin
  • 1 teaspoon cinnamon
  • 1 cup (or more) red beans, cooked or from a can
  • 1 cup (or more) black beans, cooked or from a can
  • 1 800 gram can of chopped tomatoes
  • 1 570 gram can of tomato sauce
  • about 450 grams water
  • 1 small bunch of cilantro stalks (not the leaves), chopped
  • 2 tablespoons balsamic vinegar
  • Salt & freshly ground black pepper
Instructions
  1. Heat the oil in a very large skillet and add all the prepared vegetables.
  2. Saute for several minutes, until the vegetables start to sweat and cook. Add the minced beef, carefully separating the chunks with a wooden fork. Saute with the vegetables for a minute, then add the spices.
  3. Cook for several minutes, until the beef turns brown.
  4. Add the beans, chopped tomatoes, tomato sauce, water, cilantro, salt & pepper.
  5. Bring to a boil, lower to simmer, cover partially and cook for about an hour, stirring frequently.
  6. Serve immediately or refrigerate and serve the next day.
  7. Great with rice, country bread, dollop of sour cream, grated cheddar or any other topping you can think of.
Notes

The addition of celery and balsamic vinegar is unusual, as far as traditional chilis go, – but trust me – this recipe is out of this world delicious!
